Inhibitors are substances that slow down or prevent the course of various chemical reactions: oxidation, polymerization, corrosion of metals, etc. For example, hydroquinone is an inhibitor of benzaldehyde oxidation; technetium compounds – steel corrosion inhibitor; diphenyl ketone – styrene polymerization inhibitor; nitrogen trichloride is a strong inhibitor of the reaction of chlorine with hydrogen, one thousandth of a percent is enough to stop the reaction. In the food industry, inhibitors are widely used to prevent fat hydrolysis, oxidation and fermentation reactions. Inhibitors are consumed during the reaction and take part in it.
