Why did the North become the center of the unification of France, and not the South?

Why did the North become the center of the unification of France, and not the South? How is this connected with the religious life of the then Europe?

The northern French were united with Rome because they accepted the church reform of Gregory VII; therefore they were able to organize a crusade against the southern heretics – the Cathars.
