Why do fruit plants (apples, pears, peaches), when propagated with the help of seeds, lose traits that are beneficial to humans?

1) Most varieties of fruit plants are of a hybrid nature. Their beneficial properties are not retained in subsequent crosses.
2) When pollinated, pollen of other varieties gets on the pistils and the characteristics of the variety are not preserved.
