Why is oxidation of fats more energy released than oxidation of the same amount of carbohydrates?

Molecules of carbon and hydrogen participate in the oxidation. In fats, in comparison with carbohydrates, these atoms are more, therefore, when they are oxidized, more energy is released.
This is due to the fact that in lipid molecules, in comparison with carbohydrate molecules, there is more hydrogen and very little oxygen.
