Why should the sampling rate be twice the maximum frequency of the audio we want to record?

The higher the sampling rate, the wider the spectrum of the signal can be represented in the discrete signal. As follows from the Kotelnikov theorem, in order to unambiguously restore the original signal, the sampling frequency must be twice the highest frequency in the signal spectrum.
