The Canary Current and the Gulf Stream carry their waters at the same latitudes, but one of them is considered cold and the other warm. Why?

The Gulf Stream transfers water from the equator to the shores of Europe, i.e. transfers warm water, and the Canary Current transfers cold water from the Arctic to the equator
